I just love a good chopped salad. This one is so fresh and colorful, and the cilantro dressing adds the perfect amount of spicy creaminess … without the cream of course, making it perfect for the Daniel Fast!
Ingredients for two servings:
Romaine Lettuce, chopped
Black beans, rinsed and drained
Corn (can use frozen, just thaw/defrost)
Bell pepper (any color is fine)
*Black olives might also be a yummy addition. I have also substituted pinto beans for black beans
There aren’t really any set measurements for the above ingredients. Don’t like green onions? Leave ’em out! Want more beans… add more! More lettuce… why not?!?! I usually use about a head of romain, the whole can of beans, half a can of corn, a handful of tomatoes, half a bell pepper, and two stems of green onion. I also like to crumble tortilla chips on top for an extra crunch!
CREAMY CILANTRO DRESSING:
1 cup loosely packed cilantro, stems removed and roughly chopped
1/2 cup plain Greek yogurt or coconut yogurt (for the Daniel Fast, I used one large very ripe avocado and added water to thin)
2 Tbsp. fresh lime juice (about 1/2 lime or more to taste – especially if you are using an avocado instead of yogurt)
1-2 garlic cloves
1/4 cup olive oil (with avocado, I use about 1/2 cup)
1 1/2 tsp. white wine vinegar
1/8 tsp. salt
Optional: cumin, honey/agave
Put all ingredients in a food processor until smooth, adding water or oil to thin consistency if needed.
